Cheese, especially if big sized, can be produced in small blocks to be used for different processes or to be sold directly: Gelmini machines are capable of satisfying every need the customer may have to obtain small blocks of cheese for a variety of destinations.

Both soft cheeses (like mozzarella) and harder cheeses (like Emmental, Cheddar, Edamer, Asiago, Vezzena) can be processed into different formats: from blocks obtained from a half-wheel to a small bar, from a string ready to be cubed to a wedge destined to be grated.
